Looking to beat the heat and give your immune system a serious boost at the same time? Try this incredible twist on the fudgesicle. My version is raw, vegan, and features the world's strongest antioxidant - Chaga! The Chagasicles turned out amazingly well and taste absolutely divine! Creamy, cold, and heavy on the chocolate ;) The creaminess comes from all the amazing healthy fats in the cashews, avocado, and coconut milk which feeds your brain the nutrients it needs to stay on top of your game, and the texture totally rivals any traditional cream based frozen pop. Premium chaga tea extract is added as a mega-supplement booster, packing in the antioxidant equivalent of 3 pounds of blueberries, polyphenols, beta-glucans, and adaptogen properties - probably making this the healthiest dessert ever! The main base of the Chagasicles only takes 10 minutes to make, and then you can totally get creative adding vegan chocolate sauce and all the pretty toppings like dried fruit, nuts, and coconut shavings once the chagasicles are frozen. So let's get down to business!
What You Need
For the Chagasicles
• 1/2 cup soaked cashews • 1 14-oz can coconut milk (full fat tastes best) • 1 large ripe avocado • 4 servings (2 tsp) Wild Remedies Premium Instant Chaga Tea • 1 cup / 250g pitted, packed soft dates • 1/2 cup raw cacao powder (cocoa powder will also work) • 1 tbsp vanilla extract • Tiny pinch of cayenne (optional) • Natural sweetener to taste (coconut sugar, stevia, xylitol, date syrup, etc.)
For the chocolate drizzle
• 1/2 cup coconut oil • 2 tbsp coconut manna • 2 tbsp raw cocoa powder • 2 tsp coconut nectar or sugar
Toppings • chopped dried fruit (I used cherries and blueberries) • orange zest • raw cocoa nibs • shaved dried coconut • coarse himalayan sea salt • finely chopped toasted nuts (cashews, hazelnuts, almonds, pistachios etc.)
Add all of the chagasicle ingredients to a blender and blend until you get a thick, creamy pudding. Spoon the mixture into popsicle molds and firmly knock the molds on the counter a few times to remove any air bubbles. Insert a popsicle stick into each mold and place in the freezer until set – at least 6 hours. After your chagasicles are fully frozen, create a double boiler by placing a small mixing bowl inside a pot with hot water, simmering on the stove. Add your chocolate sauce ingredients to the mixing bowl in the pot of hot water and continuously stir until all ingredients are melted and combined. Remove the chagasicles by running the mold under hot water until you can pull them out. Get artsy and decorate your chagasicles by dipping or drizzling them with the melted chocolate and sprinkle with desired toppings. Eat immediately, or place back in the freezer to set until ready to enjoy.
